About the Project
The “Food Waste to Good Taste” is an impact project initiated by the School of Biological Science, The University of Hong Kong. It is a 6-month project to rethink how to manage, reuse and audit food waste from the hospitality industry in Hong Kong. This project is funded by HKU Knowledge Exchange and supported by Green Hospitality and Hong Kong Chefs Association.
Dr. Kelvin Cheng has over 25 years of waste management and resource recovery experience within the local Hong Kong context. As a graduate chartered chemist of MRSC, Kelvin has massive analytical monitoring knowledge to serve the stringent environmental contractual requirements of the HKSAR. Kelvin has acquired significant knowledge of resource recovery, material recycling, and bio-waste composting by optimizing the waste handling facility from an operational perspective. He is also promoting smart collections with AI & IoT applications toward the development of the Smart City.
